Pumpkin Pie: low sugar, low calorie, low carb

Post Pumpkin Pie: low sugar, low calorie, low carb
PRETEND PUMPKIN PIE

This pie is low carb & low sugar. It also is crustless. So it is quite low calorie, too.
It is quite tasty!
You are welcome to use a pie crust, if you like!

PREHEAT OVEN TO 180 C Degrees
A:
(237 grms) cooked mashed Cauliflower (drain it well) {YOU CAN USE 2 CUPS OF COOKED/MASHED
(237 grms) canned Pumpkin (not pumpkin pie filling!) CAuLILFOWER IF YOU LIKE. NO PUMPKIN.}

(296 mls) Heavy Cream (OR Evaporated milk OR any type of milk you prefer)
(237 grms) Granulated Splenda (or sugar)
4 Eggs
(36 mls) OIL (Olive or Canola) of softened butter (to put inside mixture)
(6 mls) Vanilla Extract

B:
(6 mls or 12 mls) Cinnamon (I use 12 mls) This is to taste.
(3 mls) Ginger (powdered)
(6 mls) Salt (can be sea salt, if you prefer)

C: Enough Oil or Butter to oil the Pie dish (if you are not using a pie shell)
(18 mls - 36 mls) of flour or cornstarch (or glutten free flour) to coat the pie dish. (to prevent sticking)

D: MIX TOGETHER THE: Cauliflower, Pumpkin, Cream/Milk, Eggs, Oil (butter) & Vanilla extract.
Once mixture is combined, add dry ingredients and mix well.

2- Prepare your pie dish. Spread the oil or butter all over it. Sprinkle in the flour/cornstarch so it will stick
to the oil on dish, coating dish (to prevent sticking of pie to pie dish)

3- Pour mixture into a Pie Dish.
Put in PRE HEATED oven and COOK for 50 mins to 1 hour. Check at 50 mins.
Edges should be cooked. If center is a little giggly, that’s ok. It will firm up as pie cools.

Sounds good. If you use cornflour to dust the dish it is also suitable for people with coeliac disease. I shall have to send this recipe to my Neice. Thank you for posting it here Lannah.

I forgot to say that one can also use ALL pumpkin.
My daughter is diabetic and cannot have glutten, so we try to adapt things to be healthy and yummy!
