But, you cannot disprove that God exists.
There are many things out in the universe that we have not yet encountered, and just cuz we do not know/see them, it does not mean they are not out there.

No one, absolutely no one can prove or disprove both issues!!

There is no universe except that which is observed, has been observed or will be observed. But what constitutes an observer?

Hmmm... but how can the observers from this planet (us) prove that?
What we see is SO tiny compared to what there is.
And the observers from this planet are even tinier!
We are so small and so insignificant in the giant scheme of the universe!

Which would imply that we are not the only lifeforms kicking about. I've always had an issue with Shroedingers cat. What does the cat see?

That is a great analogy.
I don't think anyone ever thinks about what the cat can or cannot see, from his (or her) positioning in that limited "world" in the box!
